Chocolate chip Granola Bars



Chocolate Chip Granola Bars

I love Granola bars, they are chewy and full of flavors. I eat them everyday on my lunch break. They are just so easy to grab and it can literally fit it in my pocket.

Ingredients

Grains


  • 2 cups old fashioned oats
  • 2 cups Rice krispies cereal
  • 1/4 cup sunflower seeds (optional)


Baking and spices


  • 1/4 cup brown sugar
  • 1/4 cup chocolate chips
  • pinch of salt
  • 1/2 tsp vanilla extract 

Condiments


  • 1/3 cup honey

Oils and Vinegars


  • 5 tbsp coconut oil

Directions:


  1. Preheat oven 350 degree
  2. In separate pan, over medium heat add coconut oil, brown sugar, vanilla extract and  honey. Mix them well. After the sugar is dissolved, turn off the heat.
  3. In the baking pan, use parchment sheet and spray non stick spray. Pour some old fashioned oats and bake it for few minutes. It should be golden brown, don't let it get burned.
  4. In a bowl, add old fashioned oats, rice krispies, chocolate chips,sunflower seeds and salt. Then pour the honey sugar sauce all over the old fashioned oats. Mix them well.
  5. Then pour the mix on the 8*8 pan with parchment paper. Press the mixture into the pan.
  6. Place it in freezer for 45 minutes. Then remove the parchment paper and cut it into pieces.

Golden Turmeric Latte



Golden Turmeric Latte

Everyone has been talking about "Golden turmeric latte" lately. If you haven't heard about it yet, then you need to try it now. Back home, whenever I had sore throat, my mom used to make "Golden turmeric latte" for me. It taste so good and it helped me with my sore throat too. Now that I am far away from home, I have learned to make it by myself.







Ingredients 


Produce


  • 1/2 Tsp ginger paste


Refrigerated


  • 2 cup non-dairy milk


Baking and spices


  • 1 tsp turmeric powder
  • 1 cinnamon stick
  • pinch of black pepper
  • 3 cardamon pods
  • 1/2 Tsp vanilla extract


Oil and Vinegars


  • 1 Tbsp coconut oil



Directions:


  1. Blend all the ingredients in the mixer
  2. On medium heat, boil the turmeric milk until it gets foamy

Sweet Potato Toast with Avocado dressing


Does anyone love to munch on snacks like I do? I could literally snack on chips, cookies, and candies all day long. But it's not very healthy thing to do. So, I got this idea. Why not snack on sweet potato toast that is healthy and taste good too. Crunchy sweet potato topped with sweet and sour avocado dressing, spicy sriracha and cilantro takes it to the next level. My taste buds feel so happy right now.


Bake a sweet potato in oven:

  • Wash 2 potatoes, chop in circle shape.
  • Brush salt and olive oil on both side of the potato.
  • Bake in 420 degree for 20 minutes. 


Ingredients for avocado dressing

  • 1 avocado
  • 1/4 cup greek yogurt
  • 1 tbsp lemon juice
  • 4 stalks of cilantro
  • 1/2 tsp salt


Instructions:

  1. Add all the ingredients for avacado dressing in the mixer and make the dressing.
  2. Take a sweet potato toast, top with avocado dressing
  3. Add siracha sauce
  4. Sprinkle cilantro

Tortilla roll ups

Tortilla roll ups


Tortilla roll ups are so much fun to make. I used tortilla, cream cheese softened, lettuce, omelette, red bell pepper, cilantro. And green smoothie made from soaked chiaseeds, almond milk, kale, frozen banana, raisins. It was delicious.

Ingredients for Tortilla roll ups


  • 2 pkg cream cheese softened
  • 1/2 cup cabbage chopped
  • 1 whole carrot chopped
  • 5 eggs to make omelete
  • 5 whole tortilla
  • 1 red bell pepper chopped
  • 5 stalks cilantro chopped


Directions for Tortilla roll ups


  1. Spread cream cheese equally among the tortilla.
  2. Add omelet
  3. Sprinkle cabbage, red bell pepper, cilantro on the top of omelet.
  4. Roll them, individually in a plastic wrap and keep them in a fridge.
  5. Serve them after slicing into pieces. Enjoy.

I love holidays and  I use it as a excuse to bake cookies, and treats. And Valentine's day is right in the corner. So, lets bake some cookies that are easy to make and takes less time.

Ingredients


  • 1 box Betty Crocker Triple Chocolate Fudge Cake mix
  • 1/2 cup oil
  • 2 eggs
  • 1 cup semi sweet chocolate chips


 Directions


  • Combine cake mix, oil, eggs in a mixing bowl using spatula.
  • When the dough is ready, keep it in fridge for an hour.
  • Make a small ball size cookie, press 1/4 inch flat.
  • Sprinkle , chocolate chip on the top
  • Bake in 350 degree for 8-10 minutes.Enjoy.


Lambo Vindaloo

It has been a long time, since I have cooked lamb vindaloo. And this gloomy weather calls out for something spicy. Lamb vindaloo is one my comfort food, if I'm cold, sick, hungry, sad or missing home. The fiery taste of this dish, changes my mood in no time.

Ingredients


Meat

  • lamb 1 1/2 lbs 


Produce

  • Onions 1 cup chopped
  • tomatoes 2 tomatoes
  • garlic 2 tbsp 
  • ginger 1 tbsp
  • cilantro 5 stalks
  • potatoes 2 boiled and chopped
  • lemon few chopped


Baking & spices

  • fenugreek 1/2 tsp
  • turmeric 2 tsp
  • red chilli powder 2 tsp
  • cinnamon powder 1 tsp 
  • coriander 1 tsp
  • cumin powder 3tbsp 
  • garam masala 1tbsp
  • cloves 4 
  • bay leaf 4
  • salt as taste


Oil & Vinegars

  • 5 tbsp oil
  • 4 tsp cider vinegar


Liquid

  • 1 & 1/2 cup water


Directions


  1. Heat the oil in pan, add fenugreek and fry until light brown.
  2. Then add 1/2 of the chopped onions, turmeric, bay leaf, ginger, garlic and fry until light brown.
  3. Add meat, red chilli powder, cinnaon powder, coriander, cumin powder, garam masala, cloves, cider vinegar, salt. Stir occasionally and then cover the lid.
  4. When the meat looks cooked, add boiled potatoes, tomatoes, & water. Stir and cover the lid until tomato gets cooked. 
  5. In seperate pan, fry rest of the chopped onions until it turns dark brown. And top the cooked lamb vindaloo with the dark brown onions, lemon, & cilantro. Enjoy.

Momo Achar /Dumplings with sesame peanut sauce

Momo achar


I love Christmas and New years eve but after that winter gets kind of boring. Making momos with friends and doing silly things gets me through this boring winter. I'm pretty sure that no one can say "No" to Hot steaming momos drowning in a bowl of spicy sesame peanut sauce. Here comes the recipe for spicy sesame peanut sauce as requested.




Ingredients


Produce

  • 5 Tomatoes
  • 1/2 cup Onions
  • 1 tsp Ginger paste
  • 1 tsp garlic paste
  • 2 Serrano pepper
  • 1 tbsp lemon juice



Baking & Spices

  • 1tbsp cumin powder
  • 1 tsp turmeric
  • 1tsp sichuan pepper powder
  • 3 tbsp sesame seed
  • 3 dried chilli
  • 6 peanut
  • salt as taste


Oil & vinegar

  • 2 tbsp oil




Directions


  1. Roast sesame seed and peanut. Set aside
  2. Heat the oil in a pan ;add some red dried chilli,onions, ginger, garlic, turmeric and fry until light brown. Then add chopped tomatoes, salt, cumin powder, sichuan pepper powder. Cover the lid and cook for 5 minutes until the tomato gets cooked. Set aside, until the sauce cools down. 
  3. Add the sesame seed , peanut in the grinder and make a paste.
  4. Add chopped serrano pepper, chopped cilantro, lemon juice, along with the tomato sauce from the pan to the mixture in the grinder. Then make a paste again.
  5. If the sauce is thick or spicy; add some water. Enjoy

Jalebi


Jalebi 😋😋😋

I love "Jalebi", that has rustic golden spirals; looks crunchy on the outside and juicy inside. They taste similar to funnel cakes.

Ingredients for Jalebi batter  
  • 1 cup Luke warm water 
  • 1 tsp sugar 
  • 1 tsp instant yeast 
  • 1 cup all purpose flour 
  • 1/2 tbsp corn starch  
  • saffron few strings
  • 1 tbs yogurt  
  • 1 tsp yellow color 
  • 1 tbsp oil 

Directions
Mix them together without lumps and cover to ferment for 15 minutes. Then fry it in oil in medium heat. And dip it in Sugar water.


Ingredients for sugar water
  • 1 cup sugar
  • 3/4 cup water
  •  2 tbsp rose water 
  •  saffron few strings. 
Directions
Boil until the sugar melts and simmer to medium heat. 





Chow Mein


Chow Mein
Who doesn't love Chow Mein? I could literally eat it everyday. This recipe is loaded with vegetables, sausage, and spices. 

Ingredients
  • 2 large Carrots                          
  • 16 ounce Egg noodles                 
  •  3 tbsp Oil                                
  • 1/2 inch Ginger                           
  • 3 tbsp garlic paste                    
  • 2 tbsp soy sauce                       
  • salt & pepper as per taste 
  • 2 stalks green onions                    
  • 3 tbsp siracha                            
  • 5 tbsp ketchup                            
  • 2 tbsp sesame sauce                  
  • 2 tbsp rice vinegar                     
  • 1/2 cup red onions                      
  •  1/4 cup cilantro                          
  • 1 green chilli                         
  • 1 lime                                 
  • 1 pkg sausage                          
  • 2 dried red chill                          
  • 1 tbs sesame seed                    
  • few chopped almond                            


Direction
  1. Boil noodles with 1 tbsp salt, 2 tbs oil &water. Don't let it get overcooked. 
  2.  Drain the hot water, place the noodles in cold water.
  3.  Drain the cold water, marinate the noodles in soy sauce, sesame sauce, & vinegar.
  4.  Place the pan in medium heat; add oil, dried chilli, onions, cabbage, chilli, green onions, carrots, garlic, ginger. Stir it, don't let it get cooked, it has to be crunchy. 
  5.  Add noodles, pepper, salt, siracha, ketchup, cilantro. Stir it, with fork and let it cook for 5 minutes in medium heat. 
  6.  Fry the Sausage separately and mix it with the noodles.  
  7.  Sprinkle sesame seed, chopped almond,and decorate with lime.


Hot and Sour Soup with Tofu






Hot and Sour Soup with Tofu
Who doesn't love hot and sour soup? It is the best thing to eat in the cold and chilly weather. And this recipe takes only 15 minutes and few ingredients.

Ingredients
  • Chicken broth                       6 cups
  • Soy sauce                              2tbs
  • Red pepper powder               1/2 tsp
  • Mushroom                             1cup
  • Bamboo Shoot                       1/2 cup
  • Tofu                                       1/2 of 1 pkg 
  • Ginger                                   1/2 inch (paste)
  • Garlic                                     3 cloves
  • Rice vinegar                          3tbs
  • Corn starch                            2tbs
  • Egg                                        1 large
  • Green onion                           3(optional)  



Direction 
  1. In a large pot, add chicken broth, soy sauce, red pepper powder, mushroom, bamboo shoot, tofu, ginger & garlic.Then cook it in medium heat for 5 minutes.
  2. In a small bowl, mix cornstarch & vinegar. Then add it to the soup and stir it.
  3. In a small bowl, beat the egg and pour it into the soup slowly. Stir the soup and cook for 30 seconds.
  4. Serve the soup in the bowl and sprinkle green onions. Enjoy
