Lamb Vindaloo
It has been a long time, since I have cooked lamb vindaloo. And this gloomy weather calls out for something spicy. Lamb vindaloo is one my comfort food, if I'm cold, sick, hungry, sad or missing home. The fiery taste of this dish, changes my mood in no time.
Ingredients
Meat
- lamb 1 1/2 lbs
Produce
- Onions 1 cup chopped
- tomatoes 2 tomatoes
- garlic 2 tbsp
- ginger 1 tbsp
- cilantro 5 stalks
- potatoes 2 boiled and chopped
- lemon few chopped
Baking & spices
- fenugreek 1/2 tsp
- turmeric 2 tsp
- red chilli powder 2 tsp
- cinnamon powder 1 tsp
- coriander 1 tsp
- cumin powder 3tbsp
- garam masala 1tbsp
- cloves 4
- bay leaf 4
- salt as taste
Oil & Vinegars
- 5 tbsp oil
- 4 tsp cider vinegar
Liquid
- 1 & 1/2 cup water
Directions
- Heat the oil in pan, add fenugreek and fry until light brown.
- Then add 1/2 of the chopped onions, turmeric, bay leaf, ginger, garlic and fry until light brown.
- Add meat, red chilli powder, cinnaon powder, coriander, cumin powder, garam masala, cloves, cider vinegar, salt. Stir occasionally and then cover the lid.
- When the meat looks cooked, add boiled potatoes, tomatoes, & water. Stir and cover the lid until tomato gets cooked.
- In seperate pan, fry rest of the chopped onions until it turns dark brown. And top the cooked lamb vindaloo with the dark brown onions, lemon, & cilantro. Enjoy.
